Award-Winning Grilled Feta and Spinach Pheasant Burger Recipe





Growing up as an avid turkey hunter, I had little knowledge of other types of hunting – especially upland hunting. So, when a friend offered to take me out on my first pheasant hunt, I jumped at the opportunity to go. We drove out to Harveyville, Kansas, to a nearby game reserve early on a Saturday morning.





Brought with us were 3 hunting dogs, my guide and my excitement. I was so used to sitting in 1 spot for hours calling-in turkeys, maybe only moving to a different spot during the day if I wasn't having any luck. Pheasant hunting is a constant movement between the hunter and dogs, who sniff their way around the grounds trying to pick up the scent of a bird. Watching as the 3 dogs work together is just a part of the experience of upland hunting. Just as soon as we got started, all 3 dogs went on point. I held up my Remington 870 shotgun and gave the nod for the dogs to flush the bird. That was how I harvested my very first pheasant.

Nevada Foodies: Onion Stacked Elk Cheeseburgers





We all love to grill and some more than others, and while summer is a big grilling season several of us enjoy cooking out on the grill all year long. There is something celebratory about entertaining family and friends when you fire up the grill outdoors whether it's in the comfort of your own backyard, a public park, or a favorite hunting campsite.

Some popular foods to grill include a variety of meats like elk and beef, vegetables and seafood, but hamburgers are the most popular of all foods when grills are fired up. And why wouldn't they be? Hamburgers are easy to make, relatively inexpensive and they just taste great. Not to mention, they are truly adaptable. You can add variations of condiments and toppings like I do in my Onion Stacked Elk Cheeseburger recipe.





For these burgers, I use two pounds of ground elk meat divided into 6 equal portions before forming the patties. To help the lean meat from sticking on the grill, I like to brush each side of the patty with olive oil before seasoning with salt and freshly ground black pepper.  Since elk is best cooked to medium rare or medium, I cook these burgers for about 4-5 minutes per side and sometimes use a meat thermometer to measure the internal doneness. Then I top each one with a slice of cheese and a stack of golden fried onions.





Place the onion stacked elk burgers between a hamburger bun and then pour your favorite barbecue sauce over the top and you'll find another reason to get fired up about grillin'.

Grilled Venison Chile Cheeseburgers with Fried Shallots





If you've got ground game in the freezer, grab out a pound to a pound and a half and whip up these Chile Cheeseburgers with Fried Shallots. So simple to make and in all seriousness, they are outstanding. If you don't have shallots, substitute a sweet onion and be sure to use a potato bun. The bun is what makes the burger. Potato buns tend to be soft and delicate allowing the bun to squish down and form around the meat patty and all of the goodies on top. The chiles are roasted until soft and add a bit of heat with every bite. I kept the venison patties simple to really draw out the flavors by simply seasoning with kosher salt and freshly ground black pepper.
